The USDA Nutrient Data Laboratory reports that an apple may weigh, on average, from 101g to 223g. Since a bushel of apples weighs about 42lb (according to the University of Illinois Extension), there can be from 85 to 188 apples in a bushel, which could produce between 20 and 24 quarts of applesauce.
